Crock Pot Chicken Fajitas
Ingredients:
400g tinned chopped tomatoes
1 tbsp tomato purée
2 Cloves of crushed garlic
4 mixed colour peppers
1 Red Onion
30g Fajita Seasoning mix
500g chicken
Method:
Pour half of the chopped tomatos into the slow cooker, stir in the tomato purée and garlic. Layer over half the peppers and onions. Then add the chicken breasts and sprinkle over the fajita seasoning mix. Top this with the remainder of the chopped tomato, peppers and onions.
Cook on low for 5- 6 hours.
Remove the chicken, shred and return the the mix!
If the liquid is too thin, thicken with a spinkleing of corn flower!
