1 big bag (32 oz) frozen hash brown cubes, thawed

3 cups shredded sharp cheddar cheese, split up

1 can (10.5 oz) cream of chicken soup

1 1/2 cups sour cream

1 teaspoon salt

1/2 teaspoon black pepper (it adds nice taste)

Spray oil inside a 5-6 quart slow cooker so it won’t stick and cleans easy.

If hash browns are frozen hard, spread on a tray or bowl to thaw 20-30 minutes at room temp, or overnight in fridge. Break up big lumps for even mix.

In a big bowl, mix soup, sour cream, salt, and pepper until smooth.

Add thawed hash browns and 2 1/2 cups cheese. Stir gently till potatoes are covered and cheese spreads out.

Pour mix into slow cooker. Spread flat and press lightly with a spoon.

Sprinkle last 1/2 cup cheese on top for a yummy golden crust.

Put lid on. Cook on HIGH 3-4 hours or LOW 6-7 hours, till edges bubble, middle’s hot, and fork pokes potatoes easy.

For extra crunch, take out cooker pot, remove lid, and broil in oven 3-5 minutes. Watch it close so it doesn’t burn. (This is extra but fun!)

Let rest uncovered 10 minutes to firm up for neat scoops. Set cooker to WARM for serving—let folks grab their own!
