6 small buttermilk biscuits

6–8 slices country ham

1 tbsp butter (optional)

1/2 cup strong black coffee that is already made

2–3 tbsp ham drippings (leftover and used to cook the ham)

Country Ham Biscuits and Red-Eye Gravy: Instructions

Bake the buttermilk biscuits as per package/ recipe instructions until it gets golden and fluffy.

Heat a skillet on medium burn and fry the ham country ham slices until they turn brown and slightly crispy.

Take out the ham and put aside and leave the drippings in the pan.

Pour the black coffee that has been brewed in the hot skillet dripping with ham.

Scrape and stir the bottom of pan to bring out the tasting bits.

Cook 1–2 minutes when the gravy slightly decreases.

To add richness to the sauce add a small amount of butter and then season it with black pepper.

Put the hot cookies and cooked country ham on a tray.

Pour the red-eye gravy onto the ham or keep next to the ham to dip the biscuits.
