Chocolate orange Slow cooked cake. I had oranges I needed to use up so gave this a go.
Cake:
130g butter
1/2 cup brown sugar
3 eggs
2 cups SR flour
1 cup orange juice (I juiced my own)
1 bag choc melts (I used the Aldi ones so that’s 375g)
Icing:
1 block cream cheese room temp
100g butter? (Estimating as I didn’t measure)
1tbsp vanilla
Orange zest
1.5 cups icing sugar
Directions:
Cream butter and sugar together, add eggs, mix, alternate mixing in the flour and orange juice. Melt chocolate in a microwave safe bowl. Add melted chocolate and combine well. Pour into cake tin (think I used an 8inch tin which fit nicely into the 5.5L cooker) I baked for 1hr high and 2 hours low. I also for the last hour remembered I was supposed to add a tea towel under the lid so did that for the last hour. Prick with a skewer to make sure it’s cooked and then let cool.
For the Icing I used my stand mixer,
Mix cream cheese till it’s combined then add butter and mix well. Add vanilla and orange zest, mix. Sift icing sugar and add in 1/2 a cup in the mix at a time, mixing well after each addition. As I did this at night I refrigerated it till morning then iced the cake straight from the fridge. If you’re not refrigerating it, you may need more icing sugar depending on how runny it is.
