Tried out the Chicken Tortilla Stack for dinner tonight…very nice indeed!
Ingredients:
1kg Chicken Thigh Fillets diced into small pieces
1 onion diced
2 carrots grated
2 pkts taco seasoning
1 jar mild salsa
1 tin diced tomatoes
Minced garlic to taste
1/2 cup water
Sour cream
Instructions:
I lightly browned the chicken and onion before adding to slow cooker but don’t think you have to.
Sprinkle taco seasoning over chicken.
Add salsa, garlic, grated carrot, tin tomatoes and water and mix well.
Cook on low for approx. 5 hours.
I lined a spring form cake tin with baking paper and assembled starting with tortilla, then chicken, then cheese and repeat finishing with chicken and cheese. Cook in oven until cheese melted. Serve with sour cream and Enjoy!
