Bourbon Chicken

1 1/2 lbs chicken thighs (or breast, cooked, boneless and skinless, cut in bite-size pieces.

2 tbsp cornstarch

1 tsp garlic powder

1/2 tsp black pepper

1/2 tsp salt

2 tbsp neutral or vegetable oil (avocado/vegetable)
Sticky Bourbon Sauce

1/2 cup low-sodium soy sauce

1/3 cup brown sugar

1/4 cup bourbon (or apple juice in case of alcohol abstinence)

2 tbsp ketchup
-
1 tbsp rice vinegar (or apple cider vinegar)

3 cloves garlic, minced
-
1 tsp ginger (grated) (you can skip this but it is fantastic)

1/3rd cornstarch 2/3rd water (slurry)
Fried Rice

4 cups cooked chilled rice (better when a day old)

2 tbsp butter (or oil)

2 eggs, beaten
-
1 1/2 cups stir-fry vegetables (peas + carrots)

3 tbsp soy sauce (to taste)

1 tsp sesame oil (optional)

Green onions (optional)
How to Make Chicken Sticky Bourbon Fried Rice

Get the Chicken Ready
Combine chicken, cornstarch, garlic, salt, and pepper in a way that it comes out crispy tender in the style of chicken and it retains that sauce like a beast. -
Sear for Flavor
Heat oil on a hot skillet on medium-high. Bake chicken in a single layer until it is browned and cooked through, and develops that restaurant look and a bit of caramelized crust. -
