Chicken Breast Fajitas

Slow Cooker Chicken Fajitas

Chicken Breast Fajitas started as a simple cowboy food in northern Mexico and Texas. Ranchers grilled thin skirt steak strips and ate them with tortillas, onions, and peppers. Later, families switched to chicken for a lighter meal that’s great for busy weeknights. This easy slow cooker recipe uses just five things: chicken, peppers, and onions. It cooks slow to make veggies sweet and chicken juicy and easy to pull apart. A tasty fajita spice mix adds all the flavor. It’s perfect for quick family dinners or feeding friends without stove watching.

These fajitas shine with easy sides. Warm flour or corn tortillas keep them soft in a towel basket. Creamy avocado slices or fast guac balance the smoky taste. Sour cream or yogurt adds cool tang. Try cilantro-lime rice, black beans, or lime-dressed cabbage for crunch. Lime wedges and chopped cilantro let everyone add fresh zing.

Tender, juicy chicken with sweet peppers and onions, spiced just right. Dump in five items, cook low and slow for bold Mexican flavors. Shred, wrap in tortillas, top with guac or lime—dinner’s ready in minutes! Family favorite for busy nights.

Ingredients

  • 2 pounds chicken breasts without skin or bones

  • 3 bell peppers (any color), cut into thin strips

  • 1 big yellow onion, cut into thin strips

  • 3 tablespoons fajita spice mix (buy it or make it)

  • 1 can (14.5 oz) diced tomatoes, with juice

Chicken Breast Fajitas: Directions

  1. Cut veggies: Slice peppers and onion into thin, even strips so they cook the same.

  2. Add veggies first: Spread peppers and onion flat on the slow cooker bottom. This bed keeps chicken juicy.

  3. Prep chicken: Dry chicken with a paper towel. Rub fajita spices on both sides and press them in.

  4. Top with chicken and tomatoes: Put spiced chicken over veggies. Pour tomatoes and juice on top.

  5. Cook: Cover and set to LOW for 4-5 hours or HIGH for 2-3 hours. Chicken should shred easy with forks; veggies super soft.

  6. Shred chicken: Move chicken to a board, pull apart with forks. Mix back into cooker with juices.

  7. Taste and fix: Try it. Add a tiny bit of salt or more spice if bland. Thin with water or broth if thick.

  8. Serve: Fill warm tortillas with mix. Add lime, avocado, cheese, or sour cream.
