She could take a pound or two of ground beef and turn it into a big, satisfying dinner for the whole family. The beef gets really soft and tender, and the onion gravy gets thick and shiny after cooking all day in the slow cooker. You only need three ingredients, and there is barely any work to do — making it great for busy days when you still want a hot, homemade meal on the table.

Ingredients

  • 2 pounds ground beef (80/20 or 85/15 works best)
  • 2 cans (10.5 ounces each) condensed cream of mushroom soup, do not add water
  • 2 packets (1 ounce each) dry onion soup mix

Poor Man’s Steak Slow Cooker: Directions

  1. Spray the inside of a 4 to 6 quart slow cooker with nonstick cooking spray so food does not stick, or use a slow cooker liner if you have one.
  2. Put the ground beef in a big bowl and add one packet of dry onion soup mix. Use your clean hands to gently mix it together until the seasoning is spread all through the meat. Do not mix it too much or the patties will come out hard and tough.
  3. Split the seasoned beef into 8 equal pieces. Press each piece into a rectangle shape about three-quarters of an inch thick. Push the sides and corners together so they stay in shape. These rectangles give you that old-fashioned poor man’s steak look.
  4. Place 4 patties in a single layer on the bottom of the slow cooker. It is okay if they touch a little, but try not to stack them on top of each other.
  5. In a medium bowl, stir together the 2 cans of condensed cream of mushroom soup and the second packet of dry onion soup mix until everything is well mixed. It will look thick and light colored now, but it will turn into a smooth, dark brown gravy as it cooks.
  6. Spoon about one-third of the soup mixture over the first layer of patties. Make sure each patty gets some of the mixture on top and around the sides.
  7. Lay the other 4 patties on top, placed a little off to the side of the bottom patties so the gravy can flow around them. Pour the rest of the soup mixture over all the patties and cover them as much as you can. Some of the mixture will slide down around the meat, and that is exactly what you want for a good amount of gravy.
  8. Put the lid on the slow cooker and cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours. The patties are done when they are fully cooked through (the inside temperature should reach at least 160 degrees F) and very soft. The gravy should look thick, shiny, and deep golden brown with soft pieces of onion all through it.
  9. When it is done cooking, taste the gravy and add a little salt and pepper if you want. The onion soup mix already has a lot of salt in it, so most people find it tastes just right without adding anything extra.
  10. Use a big, wide spatula to carefully lift the patties out of the slow cooker and onto a serving plate or right onto dinner plates. Spoon plenty of the thick onion gravy over the top of each patty and serve hot.
