Ingredients

  • 2 pounds boneless, skinless chicken thighs, chopped into big bite-sized chunks

  • 1 (10.5-ounce) can cream of chicken soup

  • 1 (1-ounce) packet dry onion soup mix

  • 2 cups shredded cheddar cheese (or Colby Jack), split in half

Cheesy Chicken Bake: Directions

  1. Rub a little butter or spray inside a 4- to 6-quart slow cooker so it’s easy to clean.

  2. In a bowl, mix the cream of chicken soup and onion soup mix until smooth. This makes your tasty, thick sauce.

  3. Spread the chicken chunks evenly on the bottom of the slow cooker so they cook nicely.

  4. Pour the soup mix over the chicken. Spread it with a spoon so all pieces get covered and sit in the sauce.

  5. Sprinkle 1 cup shredded cheese on top. It will melt into the sauce as it cooks, making it super cheesy.

  6. Put the lid on and cook on LOW for 4 to 5 hours, or HIGH for 2½ to 3 hours. Chicken should be soft and shred easy with a fork. Sauce will be thick and bubbly.

  7. Stir gently once or twice to mix in some melted cheese, but keep chicken chunks whole.

  8. Add the last 1 cup cheese on top. Cover and let sit on LOW (or WARM) for 10 to 15 minutes until cheese melts into a shiny top layer.

  9. Taste the sauce. Add a tiny bit of salt and pepper if you want—the onion mix is salty already.

  10. Scoop right from the slow cooker over mashed potatoes, rice, or noodles to get all the gravy.

Spoon this cheesy chicken and sauce over soft mashed potatoes, buttery egg noodles, or plain white rice to soak up every drop of the yummy gravy.
