Ingredients
-
1 pound ground beef
-
1 small onion, diced (about 1 cup)
-
4 cups low-sodium beef broth
-
3 cups frozen cut or shredded hash brown potatoes (diced)
-
2 cups cheddar cheese (shredded), about 8 ounces
Cheeseburger Soup: Instructions
-
Over medium heat in a large skillet, cook the ground beef, stirring it until browned and no longer pink. Drain excess grease.
-
Add the chopped onion to the skillet and cook 3–4 minutes until softened and lightly flavored by the beef.
-
Transfer the beef and onion mixture into a slow cooker. Add frozen hash brown potatoes and beef broth. Stir gently to combine.
-
Cook on low flame for 6 to 7 hours or on high flame for 3 to 4 hours. Cook until the potatoes are soft and the flavors mix well.
-
About 20 minutes before serving, gradually add shredded cheddar cheese in small amounts, letting each addition melt completely. Season with salt and pepper if desired.
-
Pour the soup into bowls. If it thickens while standing, loosen with a little hot water or more broth.
