Slow Cooker Cheese & Bacon loaf (Parma Loaf)
Ingredients:
1kg chicken mince
1 cup breadcrumbs
3 eggs
3 tbsp minced garlic
2 tbsp parsley
3 tbsp chives
2 chicken stock cubes
1 cup mozzarella cheese
1 x 785g jar Dolmio pasta sauce
8-10 slices of middle bacon
Method:
Mix all ingredients together in a large bowl except the cheese, bacon & Dolmio sauce.
Lay bacon out in strips on a flat surface and overlap each piece to form a rectangle. (Make sure it’s length fits in your slow cooker).
Add chicken mixture to bacon strips and press flat into a rectangle.
Add cheese in a row in the middle. Press together.
Gently roll mince over the cheese and seal cheese in the middle and form a loaf shape.
Start from one end & overlap each piece of bacon over the top of the chicken loaf mixture.
Place baking paper in slow cooker & add 1/4 jar Dolmio sauce to slow cooker in the bottom.
Place chicken loaf on top of sauce then pour another 1/4 of the jar over the top.
Put lid on slow cooker & cook on high for 3 hours.
Take out of slow cooker and pour over rest of sauce then sprinkle with more cheese.
Put in oven for 30mins on 180 degrees Celsius to crisp bacon & melt cheese.
Remove from oven & Let it rest for 10mins the carve & serve. Enjoy.
