Cauliflower sweet potato and bacon soup
Ingredients:
1 x head of cauliflower
1 x sweet potato (medium size)
1 x brown onion roughly chopped
5 x pieces short cut bacon
1l x chicken stock
1 x tsp minced garlic
Method:
throw everything roughly chopped into a slow cooker – and season with salt/pepper
Cook on low for 8 hours.
Blitz everything with a stick blender – then mix in 125mls light cream and a good dash of Parmesan – and then some curry powder to taste.
Unbelievably yummy!!!
