This easy slow cooker soup brings the classic cabbage roll flavors together in one warm and hearty bowl. It is simple, filling, and perfect for a comforting family meal.

Ingredients

  • 1 pound ground beef (80-90% lean)

  • 4 cups Green cabbage (loosely packed) in the form of 1/2 medium head

  • 1 cup uncooked long-grain white rice (parboiled was used in this instance as well)

  • 1 (28-ounce) can process tomatoes (with juices) crushed or chopped

  • 4 cups beef broth (enough to cover, slow cooker)

  • To taste salt and black pepper (not included in the ingredients list, optional)

Cabbage Roll Soup: Instructions

  1. Brown beef: Brown the ground beef in a skillet on medium heat, stirring with a spoon as it is cooking. Bake until there is no longer any pink, 6-8 minutes. Drain down surplus fat where necessary. (You can crumble it in raw, but it will taste better when you brown it, just in case you are in a real hurry.)

  2. Prepare the cabbage: As soon as the beef is cooking cut the cabbage in the size of bites. You would have it in 1-inch squares, rough, but no fancy, as in the farmhouse style.

  3. Prepare the slow cooker: Put the browned beef into the slow cooker. Add the raw rice and chopped cabbage stirring it all around.

  4. Add tomatoes and broth: Add the cans of the tomatoes (with all their juices) to the meat, cabbage, and rice. Add the beef broth; pour in just to the point that it covers the ingredients in the broth by approximately 1/2 inch.

  5. Season: Add black pepper and salt to taste. Stir everything well to ensure that rice is covered and ingredients mixed.

  6. Cook: lid on and cook on LOW during 6-8 hours or cook on HIGH during 3-4 hours, until the cabbage is tender and the rice is cooked through. Rice will be swelled and softened making the soup to thicken a bit.

  7. Cook and serve: Season with additional salt and pepper and taste. In case, the soup does not have the desired consistency, add a small amount of hot broth or water. Pour into dishes and serve hot.
