Beef and Broccoli Slow Cooker

Servings: 4

Beef and Broccoli Slow Cooker

Ingredients

  • 1.5 pounds beef sirloin or flank steak, sliced into thin strips
  • 2 cups low-sodium beef broth
  • 0.5 cups low-sodium soy sauce
  • 0.3 cups brown sugar, packed
  • 4 garlic cloves, minced
  • 4 cups fresh broccoli florets

Beef and Broccoli: Steps

  1. Layer the beef: Lay all your 1.5 pounds beef sirloin or flank steak, sliced into thin strips flat on the bottom of a 4- to 6-quart slow cooker. Try to spread them out so every piece can soak up the sauce.
  2. Make the sauce: In a big bowl or measuring cup, mix together 2 cups low-sodium beef broth, 0.5 cups low-sodium soy sauce, 0.3 cups brown sugar, packed, and 4 garlic cloves, minced. Stir it well until the sugar melts into the liquid.
  3. Pour sauce over beef: Pour the sauce over the beef so most of the meat is sitting in the liquid. This helps it cook up super soft and full of flavor.
  4. Cook the beef: Put the lid on and cook on LOW for 4 to 270 minutes
    270:00
. The beef is ready when it is very soft and easy to pull apart with a fork. Try not to peek too much!
  5. Add the broccoli: About 30 minutes before you want to eat, add 4 cups fresh broccoli florets to the slow cooker. Push them down into the warm broth so they can soak up all that yummy flavor.
  6. Cook the broccoli: Put the lid back on and turn it to HIGH. Cook for 20 to 25 minutes
    25:00
, just until the broccoli is bright green and a little soft but not mushy.
  7. Taste and adjust: Give it a taste! If you want it a little saltier, add a tiny splash more soy sauce. If you like it sweeter, stir in a small spoonful of brown sugar.
  8. Serve and enjoy: Spoon the beef and broccoli over hot rice and pour lots of that yummy sauce on top. Enjoy every bite!

Notes

Try not to open the lid too much while it cooks — every time you lift it, heat escapes and it takes longer. You can serve this over white rice, brown rice, or even noodles.
