Serves: 4
Ingredients
-
2 pounds chicken breasts without skin or bone (about 4 medium ones)
-
1 cup apple butter
-
1/2 cup chicken broth
-
2 tablespoons apple cider vinegar
-
1 tablespoon Dijon mustard
-
1 teaspoon salt (plus black pepper to taste)

Apple Butter Chicken: Directions
-
Put raw chicken breasts in one layer at the bottom of a 4- to 6-quart slow cooker. A little overlap is okay.
-
In a small bowl, mix apple butter, chicken broth, apple cider vinegar, Dijon mustard, salt, and some black pepper until smooth.
-
Spoon lots of the apple butter mix over each chicken piece to coat it well. Pour the rest around and on top so it goes to the bottom.
-
Put on the lid. Cook on LOW for 4 to 6 hours, or HIGH for 2 1/2 to 3 1/2 hours. Chicken is done when it hits 165°F inside and shreds easy with forks.
-
Take chicken out to a plate. Shred or cut it, then put back in the pot. Stir to cover in sauce. Add more salt or pepper if you like.
-
Serve hot with extra sauce on top. Try it over mashed potatoes, egg noodles, or rice. Add green beans, carrots, salad, rolls, coleslaw, or corn on the side.
