Ingredients

  • 1½ lbs baby potatoes, cut in half
  • 1 lb fresh green beans, ends trimmed off
  • 1 small onion, chopped
  • 3 cloves garlic, chopped small
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 2 cups chicken broth
  • 1 tsp dried thyme
  • ½ tsp paprika
  • ½ tsp black pepper
  • Salt, as needed
  • 4 slices bacon, cooked and crumbled (optional)
  • 2 tbsp fresh parsley, chopped

  1. Put a large pot or Dutch oven on the stove over medium heat. Add the butter and olive oil and let them melt together. Add the chopped onion and cook for about 4 to 5 minutes, stirring now and then, until it turns soft. Add the garlic and cook for one more minute, stirring so it doesn’t burn.
  2. Add the halved potatoes into the pot along with the chicken broth, thyme, paprika, black pepper, and salt. Turn the heat up until it starts to boil. Then turn the heat down low, cover the pot with a lid, and let it simmer gently for 12 to 15 minutes.
  3. Take off the lid and add the green beans. Stir everything together gently so it mixes well. Put the lid back on and keep cooking for another 10 to 15 minutes, until both the potatoes and green beans feel soft when poked with a fork.
  4. Take the lid off the pot and let everything simmer without a cover for 3 to 5 minutes. This helps some of the broth cook down so the flavor gets stronger and richer.
  5. If you’re using bacon, stir the cooked, crumbled bacon into the pot now. Give the dish a taste and add more salt or pepper if you think it needs it.
  6. Sprinkle the fresh chopped parsley on top for color and flavor. Serve the dish warm as a cozy, Southern-style side that pairs well with almost any main meal.
