Easy slow cooker chicken curry
Right so now our curry is on… it’s pub time! .
Ingredients:
3 large chicken breasts chopped
1 red onion diced
I green pepper chopped
Approx. 8 mushrooms chopped
Sauce:
Mix all these together & add to slow cooker:
400ml coconut milk
140g tin tomato purée
3 tbsp. curry powder (any type to your taste)
3 tsp lazy garlic
1 tsp lazy chilli
1 tsp lazy ginger
Directions:
Cook on low for 6-7 hours but after 5 hours add 2 tablespoon corn flour mixed in a little water, also leave lid off for this last hour to help thicken it up.
Serves with rice and fresh coriander.
It’s easy and we love it so much we’ve only had 1 takeaway curry since 2 years!! Above serves 4 persons but instead we use the leftovers on jacket potatoes on Sunday evenings.
