Slow Cooker Chicken Honey Garlic Noodles (“Lo-Mein”)
Cooked this and it came out perfect! You could use more sriracha if you like spicy but my family likes mild. Enjoy!
Ingredients :
1.5 pound of chicken thighs
7 tablespoon soy sauce
7 tablespoon honey
2 tablespoon sriracha
1 tablespoon hoisin sauce
1 tablespoon corn starch mixed with 1 tbsp. water
100 ML chicken stock
Ginger paste (about 1/2 tablespoon)
2 garlic cloves minced
Green Onion
Angel hair pasta
Frozen Asian stir fry veggies (usually mix of broccoli, carrot, onions, water chestnuts, etc. I like Bird’s Eye Brand.)
Directions:
1. First Add chicken thighs in the slow cooker
2. Add in soy sauce, honey, sriracha, hoisin sauce, corn starch with water, chicken stock, ginger paste and garlic cloves
3. Mix around to coat the chicken in the liquid before placing the lid on the pot and covering
4. Cook on HIGH for 3.5 hours (I was told 4 hours but I found mine was done a little sooner. Depends how much chicken you use. Check on it and be sure not to overlook.)
5. Boil angel hair pasta on the stove – when it’s done drain all the water and dump the noodles into the slow cooker. Mix around to combine and coat the noodles.
6. In a frying pan, cook frozen Asian Stir fry veggies. When finished, drain excess water and add veggies to the the crock pot and mix around to coat in sauce. Chicken should be tender and shred into pieces as you mix.
7. Serve and add green onion on top for garnish!
