This easy slow cooker Yankee pot roast uses just 4 things. It’s my try at my aunt’s old family recipe from 1962. She acts like it’s simple, but the meat gets so soft in shiny, yummy gravy. I tested it many Sundays and found the trick: tasty beef, basic veggies, and one kitchen staple that makes great gravy. 3 to 4 lb beef chuck roast

1 1/2 lb small gold potatoes, cut in half if big

1 lb carrots, peeled and chopped into 2-inch pieces

2 (10.5 oz) cans cream of mushroom soup

Put potatoes in a flat layer at the bottom of a 5- to 7-quart slow cooker. Add carrots on top. This makes a soft bed so meat won’t stick.

Put the chuck roast on the veggies. Face the fat side up—it melts and keeps meat juicy as it cooks.

Mix the mushroom soup with 1/2 cup water in a bowl till mostly smooth. Keep it thick for good gravy.

Pour soup mix over meat and veggies. Coat the top well. Spoon some down sides to mix with potatoes and carrots.

Cover and cook on LOW 8-10 hours, or HIGH 4-5 hours. Meat should pull apart easy with a fork, and veggies very soft.

Lift roast to a board and veggies to a plate with a spoon. Skim extra fat from liquid in cooker.

Stir liquid till smooth. It’s thick, shiny brown gravy. For thicker, cook on HIGH with lid off 10-15 minutes, stirring now and then.

Cut or shred meat. Put back in cooker into gravy. Spoon gravy on top to stay wet.

Serve hot beef, potatoes, and carrots with gravy on each plate.
