What You Need

  • 3 to 4 pounds raw pork baby back ribs (take off the thin skin on the bone side if you want)

  • 1 1/2 cups BBQ sauce (pick your fave from the store)

  • 1/2 cup ketchup

  • 1/4 cup packed brown sugar

  • 2 tablespoons Worcestershire sauce

How to Make Tax Day Ribs Slow Cooker

  1. Put the raw ribs on a cutting board. If there’s a shiny thin skin on the bone side, use a knife to lift it and pull it off with a paper towel. It makes ribs softer, but skip if you’re fast.
  2. Cut the ribs into small groups of 3 or 4 so they fit in your slow cooker nice and tight. This cooks them even and easy to eat.
  3. Lay the rib pieces in the slow cooker in one flat layer, meat side down. They can overlap a little, but keep them mostly flat so sauce covers all.
  4. In a bowl, mix BBQ sauce, ketchup, brown sugar, and Worcestershire sauce until smooth and sugar melts.
  5. Pour the sauce all over the ribs. Lift ribs a bit with a spoon so sauce goes under and around. Spoon more on top to cover everything.
  6. Put the lid on. Cook it on low heat for 7-8 hrs or high heat for 3.5-4 hrs. Ribs are ready when super soft but stay together, and meat pulls off bone easy.
  7. Use tongs and a big spoon to take ribs out—they’re wobbly! Put on a plate. For thicker sauce, scoop fat off the cooker juice, pour some in a pot, and boil on stove 5-10 minutes to make it stickier.
  8. Spoon warm sauce on ribs before eating. Serve hot with extra sauce and napkins!
