Sweet and Sour Pork Chops Slow Cooker

What You Need

4 pork chops with bones, about 1 inch thick (2 to 2½ pounds total)

2 big yellow or white onions, cut into thin slices

1 cup packed brown sugar (light or dark)

1 cup apple cider vinegar

Put the onion slices flat on the bottom of a 4- to 6-quart slow cooker. They make a soft bed to hold up the pork and get super yummy while cooking.

Lay the pork chops on top of the onions in one layer. They can overlap a bit. If needed, stand a couple on the side to fit them all.

In a small bowl, mix the brown sugar and vinegar. Stir until the sugar melts and it looks shiny and smooth. This is your sweet-tangy sauce!

Pour the sauce over the pork and onions. Spoon some around the edges so everything gets covered.

Put on the lid. Cook on LOW for 6-7 hours or HIGH for 3-4 hours. The pork will be so soft it falls off the bone. Don’t peek too early!

Use a big spoon or tongs to lift out the pork. Put it back in the juice to stay warm. Stir the soft onions into the sauce.

For thicker sauce, leave the lid off on WARM or LOW for 15-20 minutes. It gets sticky and glossy.
