Spring Pea Shell Pasta: Directions

  1. Turn oven on to 375°F (that’s about 190°C). Rub oil or butter in a medium baking dish (around 2 quarts) so nothing sticks.

  2. Pour dry pasta shells into the dish. Spread them out flat.

  3. Scatter frozen peas all over the pasta. This helps them stay nice and soft.

  4. In a bowl, stir broth, cream, Parmesan, salt, and pepper until smooth. Taste it and add more salt if needed.

  5. Slowly pour the mix over the pasta and peas. Press down so all pasta gets wet.

  6. Cover the dish tight with foil. Bake it in the center of the oven for 30 minutes.

  7. Remove foil (be careful of steam!). Stir from the bottom up. Pasta should be almost done, sauce still thin.

  8. Bake without foil for 10-15 more minutes. Stir once in the middle if you want. Look for done pasta, thick sauce, and golden top.

  9. Let it rest 5 minutes. Sauce will thicken more. Pour in a little broth if it gets too thick. Taste and fix salt or pepper.

  10. Sprinkle extra cheese on top. Serve hot straight from the dish—everyone scoops their share!

Serve with a simple salad with lemon squeeze and warm bread to dip in the sauce. Pair with light white wine like Pinot Grigio or fizzy lemon water. Add chicken or fish on the side for extra power.
