Ingredients
- beef stew meat → 2 pounds, cut into 1½-inch chunks
- mild curry simmer sauce → 1 pieces (16–18 oz bottle)
- low-sodium beef broth → 1 cups
- baby carrots → 1.5 cups
- baby gold potatoes → 1 pounds, halved or quartered if big
Steps
- Add the beef: Put the 2 pounds beef stew meat, cut into 1½-inch chunks into the bottom of a 4 to 6-quart slow cooker. Spread the pieces out so they’re not all stacked up in one big pile.
- Add the veggies: Drop the 1.5 cups baby carrots and 1 pounds baby gold potatoes, halved or quartered if big right on top of and around the beef. They don’t have to be perfect — just tuck them in wherever they fit.
- Pour in the broth: Pour the 1 cups low-sodium beef broth over everything in the pot. Try to get it spread out so it doesn’t all land in one spot.
- Add the curry sauce: Give the bottle of 1 pieces mild curry simmer sauce (16–18 oz bottle) a good shake before you open it. Then pour it all over the beef and veggies. Don’t rinse the bottle out with water — but if you want to get every last drop, use a spatula to scrape the inside. This sauce is where all the yummy flavor comes from!
- Give it a little stir: Use a spoon to gently stir once or twice so the sauce gets spread around a bit. Then put the lid on tight.
- Let it cook: Set the slow cooker to LOW for 7 to 420 minutes
