Southern Fried Alligator Bites: Directions

  1. Make the remoulade: Mix mayonnaise, ketchup, hot sauce, mustard, paprika, cayenne, lemon juice, and salt in a small bowl. Chill in the fridge while you cook.

  2. Marinate the meat: Put alligator pieces in a bowl. Pour buttermilk over them. Add salt, pepper, garlic powder, and onion powder. Cover and chill for at least 1 hour.

  3. Prepare the coating: In a shallow dish, stir together flour, cornmeal, Cajun seasoning, and paprika.

  4. Heat the oil: Pour oil into a deep pan or fryer to reach about 350°F (hot enough to sizzle). If you don’t have a thermometer, test with a small piece of bread; it should turn golden in about 45 seconds.

  5. Coat the bites: Take each alligator piece from the buttermilk, let extra drip off, then roll in the flour mixture so it’s well coated.
