2 big yellow onions, cut into thin slices

2 packets (1 ounce each) brown gravy mix

Spread the onion slices flat on the bottom of a 5- to 7-quart slow cooker. They make a cozy bed to keep the meat juicy and help melt into the gravy.

Put the beef chunks on top of the onions in one layer. They can touch or overlap a little, but don’t pile them too high for even cooking.

In a bowl, mix the gravy packets and beef broth with a whisk until smooth with no lumps. It looks watery now but gets thick and shiny later.

Pour the gravy mix over the meat and onions so everything gets wet. Don’t stir—the onions stay down to soften and blend in.

Put the lid on and cook on LOW for 7 to 9 hours, or HIGH for 4 to 5 hours. The beef should shred easy with a fork. Don’t peek early to trap the heat.

When done, stir gently. Onions will be mushy, and liquid turns to glossy brown gravy coating the beef.
