Simple to make, filling for the whole family, and lovely served alongside a fresh green salad, buttered green beans, or thick crusty bread.
Ingredients
- 1 pound minced beef
- 2 cups dry elbow macaroni
- 1 medium onion, finely chopped
- 1 tin (15 oz) tomato sauce
- 1 tin (14.5 oz) chopped tomatoes, with all the juice
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 cups water
Slow Cooker Simple Slumgullion: Directions
- Give the inside of a 6-quart slow cooker a light coating of oil or butter so nothing sticks. Drop in the raw minced beef and press it into small, loose pieces across the bottom. Scatter the chopped onion right on top of the beef.
- Pour the dry macaroni over the beef and onion layer. Add the tomato sauce, chopped tomatoes with all their juice, salt, pepper, and water. Give it a gentle stir so the pasta gets mostly covered by the liquid.
- Put the lid on and cook on low for 3 to 4 hours. Give it a stir once or twice when you can. Keep cooking until the beef is fully cooked through and the macaroni feels nice and soft. If it looks too thick near the end, splash in a little extra water and stir it through.
- Have a little taste and add more salt or pepper if you feel it needs it. Spoon hot into bowls and enjoy straight away.
