Slow Cooker Pumpkin Scones

Made Lady Flo’s famous slow cooker pumpkin scones. Never done them in in slow cooker before but so happy with the outcome!

Ingredients:

1 tablespoon butter
1/2 cup caster sugar
1/4 teaspoon salt
1 egg
1 cup mashed pumpkin
2 cups self raising flour

Directions:

Whisk butter & sugar together. Add egg & mix. Add pumpkin & mix. Add sr flour & salt & when combined knead on bench with extra flour until it’s not sticky anymore. Cut into circles about 2-3cm thick & place in sc (I sprayed the bottom & then put baking paper down). Cook on high for 1hr45m with towel under the lid.

I reduced the sugar & used nuttelex instead of butter as myself & 2 of my kids have a dairy intolerance.
