This 4-ingredient slow cooker potsticker dish is just right for Earth Day cooking: it’s easy, it makes very little waste, and it’s super comforting. We use a bag of frozen pork potstickers and only three more simple pantry items to make a full meal that tastes way fancier than it really is.
Potstickers first came from northern China, and people usually fry them in a pan. But in this recipe, they cook slowly in yummy broth instead, soaking up sauce instead of oil. You just set it up and let the slow cooker do the work, so you can spend time with friends while it cooks. Everyone will be surprised you made something this tasty with so little effort!
Serve the potstickers in shallow bowls, and pour lots of the tasty broth and veggies right on top. You can add fresh toppings if you have them, like sliced green onions or cilantro, but that part is up to you.
This dish goes great with steamed brown rice or quinoa to soak up extra sauce, or a side of roasted or stir-fried veggies for more color on your plate. A crunchy green salad with sesame or ginger dressing also tastes great with this meal and keeps everything feeling light but filling.
Servings: 4
Ingredients
- 1 bag (24–32 oz) frozen pork potstickers (about 18–24 pieces), do not thaw them first
- 3 cups low-sodium chicken or vegetable broth
- 2 cups frozen stir-fry vegetable blend
- ⅓ cup teriyaki sauce from a bottle, or use soy-ginger stir-fry sauce instead
Slow Cooker Potsticker: Directions
- Place the frozen pork potstickers in a flat, even layer at the bottom of a 4- to 6-quart slow cooker. It’s okay if they touch each other, but try to keep them from stacking more than two layers high so every piece cooks evenly.
- Slowly pour the chicken or vegetable broth over the potstickers. Make sure most of the potstickers are at least partly covered by the broth. If needed, gently push them around with a spoon so the broth spreads evenly.
- Sprinkle the frozen stir-fry vegetables evenly across the top of the potstickers. You don’t need to thaw the veggies first — as they cook, they’ll release water that helps make the broth even tastier.
- Drizzle the teriyaki sauce over the top of the vegetables and potstickers. Try not to stir the mixture, since leaving it alone helps the potstickers stay whole instead of falling apart.
- Put the lid on the slow cooker. Cook on LOW for 3 to 4 hours, or on HIGH for 1½ to 2 hours. The potstickers are ready when they are hot all the way through (at least 165°F/74°C) and the vegetables are soft.
- When the soup is done cooking, taste the broth. If you want a stronger flavor, add a little more teriyaki sauce or a small pinch of salt. Use a slotted spoon to carefully lift the potstickers out so they stay in one piece, then spoon the veggies and broth on top when serving.
