Sooo last night I noticed my potatoes were starting to sprout just a wee bit, thought I’d give making a slow cooker potato soup a go, ultimately I just threw things I had in the pantry/fridge together and hoped for the best well it worked! Kids scoffed it down.
Ingredients:
2kgs of peeled potatoes diced
250g bacon slices diced
2 large white onions sliced
2 red capsicum diced
3 cups chicken stock
2 teaspoon chives
1 teaspoon crushed garlic
2/3 cup sour cream
4 tablespoon butter
1/3 cup flour
Roughly 1/2 cup milk
Directions:
Put everything except, bacon and milk, flour, butter and sour cream, in the slow cooker, Brown bacon in a fry pan then transfer to slow cooker including the fatty, greasy goodness, cook on low for 6-7hrs depending on how hot your slow cooker runs. Once potatoes are firm but soft give it a rough mash.
In saucepan heat up butter once butter melts mix flour in until thick, slowly stir milk and sour cream mix thoroughly then add to soup. Season as desired.
