Servings: 6
Ingredients
- 1½ pounds ground beef
- 2 cans (15 ounces each) sliced potatoes, drained
- 1 can (10½ ounces) condensed cream of mushroom soup
- 1½ cups shredded cheddar cheese
Slow Cooker Poor Man Liberty Supper: Directions
- Get the slow cooker ready. Lightly coat the inside of your slow cooker with a little cooking spray or oil so nothing sticks. Add the raw ground beef to the bottom and spread it out into a flat, even layer. Break up any big clumps with a spoon so the meat cooks evenly all the way through.
- Layer in the potatoes. Take your drained sliced potatoes and spoon them evenly over the ground beef. Try to cover the beef completely from one edge of the slow cooker to the other so every bite gets some potato.
- Add the soup and cheese. Spread the condensed cream of mushroom soup over the layer of potatoes, smoothing it out as evenly as you can with the back of a spoon. Then sprinkle the shredded cheddar cheese all over the top in an even layer, making sure to cover most of the surface.
- Cook until tender. Place the lid on the slow cooker. Cook on LOW for 5 to 6 hours, or on HIGH for 3 to 4 hours. You’ll know it’s done when the ground beef is fully cooked through and the potatoes feel soft when poked with a fork.
- Stir and serve. Once cooking is finished, gently stir everything together so the beef, potatoes, sauce, and melted cheese all mix into one hearty dish. Scoop it into bowls while it’s hot and serve right away.
