2 lbs. boneless, skinless chicken, in 1-inch pieces.

1 cup orange marmalade

1/3 cup soy sauce (low sodium or regular)
Slow Cooker Orange Chicken: Instructions

Arrange the diced pieces of chicken breast in an even layer in the bottom of a 4 to 6-quart slow cooker.

Pour the orange marmalade on top of the chicken, and spreading over the chicken, make sure the majority of the chicken is covered by the marmalade in a nice layer.

Sprinkle the soy sauce on the marmalade and the chicken. Do not stir but put the marmalade on top to melt slowly into the chicken as it cooks forming that sticky sweet-savory sauce.

Cover the slow cooker with the lid and cook the chicken on LOW (between 3 and 4 hours) or on HIGH (between 1 1/2 and 2 hours) until cooked. The chicken pieces are supposed to be transparent and to have an internal temperature of 165degF (74degC).

After cooking the chicken, carefully mix the whole in the slow cooker to ensure that the chicken pieces have a full coverage of the thickened orange-soy sauce. In case the sauce appears thin, leave the lid uncovered, and cook on HIGH another 10 to 15 minutes, stirring every now and then, until this reduces and becomes sticky and shiny.
