Slow Cooker Onion Beef. This yummy beef dish is my go-to when I peek in the fridge and have no clue what to cook. It’s like grandma’s hug in a pot! Just toss raw beef and chopped green onions in the slow cooker with a few easy add-ins. Let it bubble low and slow for supper that makes everyone happy.

Makes 6 bowls

What You Need

  • 3 to 3½ pounds beef chuck roast (the big meat chunk)

  • 1½ cups chopped green onions (the springy kind, all parts)

  • 1 packet dry onion soup mix (1 ounce)

  • 1 cup beef broth (pick low-salt if you can)

  • 2 spoons Worcestershire sauce

How to Make Slow Cooker Onion Beef

  1. Put your slow cooker on the counter. Make sure it’s off. Cut off any super fat parts from the beef, but keep some for yummy taste.

  2. Put the raw beef flat in the bottom. Cut it into big pieces if it won’t fit nice.

  3. Mix the soup mix, broth, and sauce in a bowl. Stir till it’s smooth. This is your magic juice!

  4. Pour the juice all over the beef. Let some go under and around it.

  5. Sprinkle chopped green onions on top. Let some drop into the juice. Looks pretty, right?

  6. Put the lid on tight. Cook it on low heat for 8-10 hrs or high heat for 4-5 hrs. Beef gets soft and easy to pull.

  7. Don’t peek! When done, shred beef with two forks right in the pot. Mix with onions and juice. Toss out big fat bits.

  8. Taste it. Add salt or more sauce if you want. Let it sit on warm for 10-15 minutes.

  9. Scoop hot over mashed potatoes, noodles, or rice. Add extra onions and juice on top. Dig in!
