Slow Cooker Mississippi Beef Stew
🥩 Main Ingredients
- 1½ pounds stew beef
- 1½ pounds baby potatoes, cut in half
- 1 pound carrots, sliced
- 1 yellow or white onion, chopped into small pieces
🌿 Seasoning
- 1 packet ranch seasoning mix
- 1 packet au jus gravy mix
🧈 Additions
- ½ cup butter
- 5–6 pepperoncini peppers

- ➡️ Place the cut-up beef, halved baby potatoes, sliced carrots, and chopped onion into your slow cooker. Space them out evenly so they’re all sitting in one flat layer.
- ➡️ Sprinkle the ranch seasoning mix and au jus gravy mix all over the top of the beef and veggies. Try to cover everything evenly so each bite gets great flavor.
- ➡️ Cut the butter into a few small chunks and place them on top of the mixture. Then tuck the pepperoncini peppers in and around the beef and vegetables.
