3 to 4 pounds boneless beef chuck roast, cut off extra fat on top

1 packet (1 ounce) dry onion soup mix

2 cups Merlot red wine (or enough to cover half the meat’s sides in your cooker)

Wipe the chuck roast dry with paper towels. Cut off any thick, tough fat, but leave some for taste.

Put the roast flat in the bottom of a 5- to 7-quart slow cooker.

Sprinkle the onion soup mix over the top and sides. Press it gently to stick.

Pour Merlot slowly around the edges, not on top, so soup stays put. Use enough to reach halfway up the meat (about 2 cups).

Put on the lid. Cook on LOW 8 to 10 hours, until meat pulls apart easy with a fork. Don’t peek to keep heat in.

When soft, use two forks to pull meat apart in the cooker. Mix into the dark red wine juice. Keep some big pieces for a cozy feel. Stir back crispy bits to soften a bit.
