Slow Cooker Mediterranean Chicken.
Ingredients:
1 packet skinless, boneless chicken thighs
1 onion sliced
2 carrots small cubed
1 green pepper sliced
1 red pepper sliced
2 courgettes cubed
1 tin Haricot Beans
1 tin chopped tomatoes
2 tablespoons Pearl barley
1/2 chorizo chopped
1 red chilli de seeded and chopped
3 cloves garlic chopped
2 tsp mixed herbs
2 tsp paprika
Directions:
Simply add all the ingredients to your slow cooker and stir to mix. Pop the chicken thighs on top (I sprinkled the chicken with black pepper and smoked paprika). Cook on low for approx. 6 hours. (I put mine on when I left for work at 8am and turned it off when I got home at 5.30pm).
I served mine with a microwave packet of vegetable rice and it was delicious.

Question: So is chopped tomatoes the only liquidy thing u added? As looks like a good lot of liquid but your ingredients don’t say xx
Answer: Yes, only 1 tin of chopped tomatoes . It’s surprising how much juice is generated from these veg, even the Pearl barley didn’t dry it up lol. I had an extra standby tin of chopped tomatoes ready incase I needed to thin it a bit when I came home from work, but as you can see it wasn’t necessary.
Question: Could you use chicken breast instead and I don’t like tinned tomatoes, what could you use instead? Sorry if these are daft questions I just got a slow cooker and need ideas for things I can bung in when I’m at work.
Answer: Yes chicken breast will be fine.
Question: Can I substitute with any other beans?- don’t have haricot!
Answer: Yes that shouldn’t be an issue. I bet butter beans would be nice too x
Question: Do you add the water of the haricot beans or drain them ?
Answer: I drained them x
Question: That looks enough for 6 people.
Answer: Yes it could be. I used it for four greedy ones.
