Ingredients

  • 3 to 4 pounds of beef chuck roast with the extra fat trimmed off.

  • 1 bottle (16 oz) Italian salad dressing

  • 1 packet (0.7–1 oz) dry Italian dressing mix

  • 1 cup sliced pepperoncini peppers (plus 2–3 tbsp brine)

  1. Put the beef roast in the bottom of a 5- to 6-quart slow cooker.

  2. Sprinkle the dry dressing mix all over the top of the meat.

  3. Pour the salad dressing over the beef. Add peppers and brine around it.

  4. Cover and cook on LOW 8–10 hours, or HIGH 4–5 hours, until meat pulls apart easy with forks.

  5. Move meat to a big bowl. Shred with two forks. Throw out big fat bits.

  6. Scoop off extra fat from the cooker juices. Put shredded meat back in. Stir to soak up the yummy sauce.

  7. Taste it. Add seasoning if you want (dressing has plenty of salt). Keep on WARM to serve.
