4-Ingredient Slow Cooker Elbow Macaroni Feast
Servings: 6
Ingredients
- 2 cups dry elbow macaroni
- 2 cups chicken broth
- 8 ounces cream cheese, cut into cubes
- 2 cups shredded cheddar cheese
Directions
- Spray the inside of your slow cooker with nonstick spray, or rub a thin layer of butter inside. This step is optional, but it makes cleanup easier later.
- Pour the dry elbow macaroni and chicken broth into the slow cooker. Add the cubed cream cheese and shredded cheddar cheese on top.
- Stir everything together gently. Make sure the macaroni is covered in liquid and try to push the cream cheese cubes down under the broth so they melt evenly.
- Put the lid on and cook on LOW for 1½ to 2½ hours. Stir once or twice while it cooks. The macaroni is ready when the pasta feels soft and the sauce looks smooth and creamy. If the sauce gets too thick before the pasta is soft, stir in a small splash of warm broth or water to loosen it.
- Turn off the slow cooker and let the macaroni rest for about 5 minutes so the sauce thickens up a little more. Give it one final stir, then scoop into bowls and serve warm.
