  • 1 pound ground beef
  • 12 ounces dry egg noodles
  • 2 cans condensed cream of mushroom soup (10.5 ounces each)
  • 4 cups low-sodium beef broth
  • 1 packet onion soup mix

Slow Cooker Depression Beef and Noodles: Directions

  1. Get the slow cooker ready. If you’d like, lightly spray the inside of the slow cooker with cooking spray to make cleanup easier later. Place the raw ground beef in the bottom of the slow cooker and break it apart into large chunks with a spoon or your hands. Sprinkle the onion soup mix evenly across the top of the beef so it covers most of the meat.
  2. Layer the noodles and soup. Spread the dry egg noodles in an even layer right on top of the ground beef. Then spoon the condensed cream of mushroom soup over the noodles, spreading it out as best you can so it covers a good amount of the surface.
  3. Add the broth and start cooking. Slowly pour the beef broth over the entire mixture. Use the back of a spoon to gently press the noodles down into the liquid so most of them get wet. Put the lid on the slow cooker and cook on LOW for 4 to 5 hours, or on HIGH for 2 and a half to 3 hours.
  4. Stir halfway through. About halfway through the cooking time, take the lid off and give everything a good stir. Break the ground beef into smaller pieces as you stir so it cooks evenly. Put the lid back on and keep cooking until the beef is fully cooked through and the noodles have turned soft and tender.
  5. Check the texture and serve. Give the pot one more stir before serving. If the mixture looks too thick or dry, pour in a small splash of extra broth to loosen it up. If it looks too watery, leave the lid off for 10 to 15 minutes so it can thicken. Once it looks just right, spoon the beef and noodles into bowls and serve while hot.
