Slow Cooker Crack Chicken – Bacon Cheese Chicken: This slow cooker crack chicken is soft, creamy, and full of yummy flavor. Chicken cooks low and slow until it falls apart, then gets mixed with cream cheese, cheddar, and crispy bacon. It’s a simple, cheesy dinner that’s great for busy nights and works well for low-carb or carnivore diets too.

Ingredients

  • 2 lb boneless, skinless chicken thighs (or chicken breasts)
  • 8 oz full-fat cream cheese (block style)
  • 1 cup shredded cheddar cheese (or Colby-Jack cheese)
  • 6–8 slices bacon, cooked and crumbled
  • 1 tsp salt (add more or less to taste)
  • ½ tsp black pepper (this is extra; skip it for strict carnivore)
  • ½ tsp garlic powder (this is extra; skip it for strict carnivore)

Strict carnivore tip: Just use the chicken, cream cheese, cheddar, bacon, and salt.

Slow Cooker Crack Chicken – Bacon Cheese Chicken: Instructions

  1. Lay the chicken pieces flat in one layer at the bottom of the slow cooker. Give them a little breathing room instead of piling them one on another.
  2. Sprinkle the salt evenly over the top of the chicken. If you’re using the black pepper and garlic powder, sprinkle those on too.
  3. SPlace the cream cheese block directly over the chicken. Don’t stir it in yet — just let it sit there.
  4. Put the lid on the slow cooker. Cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours, until the chicken is very soft and tender.
  5. Once the chicken is fully cooked, use two forks to shred it into small pieces right inside the slow cooker.
  6. Stir everything together well. The warm cream cheese should mix in and turn into a smooth, creamy sauce.
  7. Add the shredded cheddar cheese and the crumbled bacon pieces. Stir until everything is well mixed together.
  8. Put the lid back on and cook for another 15 to 20 minutes, until the cheese is completely melted and gooey.
  9. Give it one more taste, and add a little more salt if you think it needs it.
  10. Serve warm, on its own or over rice, potatoes, or low-carb sides like cauliflower rice.
