Slow Cooker Christmas Cake ?
Ingredients:
Approx 800g sunbeam mixed fruit
600mls of Dare Double espresso
2 1/2 cups of SR Flour
1 teaspoon mixed spices
3tbls of Rum
Glacèd cherries ?
1tbls of Golden syrup
Directions:
Soak Fruit in milk and Rum for 24hours (In fridge), I also added a few more fresh Glacèd cherries to soak the alcohol up
Mix in sifted flour and spice. Depending on how much liquid you may need to add more to make the right consistency then add golden syrup. Mix together and put in lined tin. I turned my slow cooker on so it would be nice and hot. On high for 1 1/2 hours and then 1 1/2 hours on low. When it was done in also glazed it with melted apricot Jam.
