Servings: 10
Ingredients
- 2 pounds frozen ground beef, kept in blocks
- 16 ounces processed cheese loaf, cut into cubes
- 8 ounces cream cheese, cut into cubes
- 1 tin (283g/10oz) diced tomatoes with green chillies, undrained
- 1 tablespoon yellow mustard
- 1 teaspoon onion powder
Slow Cooker Cheeseburger Beef Dip: Directions
- If you’d like, spray the inside of your 4- to 6-quart slow cooker with a light coat of nonstick spray to help with cleanup later. Place the frozen blocks of ground beef in the bottom of the slow cooker. Next, add the cubed processed cheese and cubed cream cheese, tucking the pieces around and on top of the beef so they can melt evenly as everything cooks.
- Pour the can of diced tomatoes with green chiles right over the top, including all the juice from the can. Add the tablespoon of yellow mustard and the teaspoon of onion powder. Don’t stir yet — just let the ingredients sit in layers so the beef has time to cook through slowly.
- Pop the lid on and switch the slow cooker to the LOW setting. Let everything cook for 4 to 5 hours. By the end of this time, the beef should be fully cooked with no pink left, and the cheese cubes should be soft and mostly melted into the mixture.
- Take the lid off carefully, since steam will escape. Use a wooden spoon or a meat chopper tool to break the beef apart into small, bite-sized pieces. Stir everything together well, mixing the melted cheese, beef, and tomatoes until the dip looks smooth, creamy, and evenly blended with no big cheese lumps left.
- Put the lid back on and continue cooking on LOW for another 15 to 30 minutes if the dip still needs to fully melt together. Give it one good stir partway through this time so it heats evenly and turns silky smooth all the way through.
- When the dip is hot and creamy, switch your slow cooker setting to WARM. This helps hold the dip at just the right serving temperature. Set out your chips, crackers, or toasted bread slices and let everyone dig in while it’s warm and cheesy.
