  • diced tomatoes with green chiles, undrained, in 2 cans. → 10 ounces

Slow Cooker Beef Queso: Directions

  1. Brown the ground beef: In a large, high-sided pan, over medium-high heat, crumble the ground beef and cook, stirring frequently until it is completely brown with no pink showing, 7-10 minutes.

  2. Drain the beef: Take the skillet on its side and scoop out or pour out as much grease as possible. You want the beef to be tasty but not to much fat that it makes the queso greasy.

  3. Add beef to slow cooker: Pour the browned, drained ground beef into the bottom of a slow cooker, and spread it into a thin layer.

  4. two secret additions: Put the pieces of processed melting cheese on top of the beef, then pour the diced tomatoes and green chiles (with their juices) all over the top.

  5. Cook until melted: Set the lid on the slow cooker and cook on LOW 2-3 hours, or cook on HIGH about 1-11/2 hours, until the cheese is fully melted and the mixture is hot and bubbly.

  6. Stir to blend: When the cheese melts, stir slowly and thoroughly, scraping up to the bottom so that the browned beef, cheese, and tomatoes with chiles combine to make a smooth, golden queso.

  7. Modify consistency: Add a splash or two of milk or water to the queso to achieve your desired dipping or spooning consistency.

  8. Serve and hold: Set the slow cooker to WARM and transfer the beef queso to the crock serving it directly, giving it a stir occasionally as your friends and family serve themselves.
