  • 2.5 pounds beef stew meat, cut into 1½-inch chunks
  • 1 pieces can crushed tomatoes (28 oz)
  • 0.5 cups dry red wine
  • 1 pieces large green bell pepper, cut into thin strips
  • 1 pieces large red bell pepper, cut into thin strips
  • 4 pieces garlic cloves, minced
  • 2 teaspoons dried Italian seasoning
  • 1 teaspoons kosher salt, plus more if needed
  • 0.5 teaspoons black pepper
  • 1 tablespoons olive oil (optional, makes sauce richer)
  • 0.3 teaspoons crushed red pepper flakes (optional, adds a little heat)

Slow Cooker Beef Cacciatore: Steps

  1. Add beef to slow cooker: Put all your 2.5 pounds beef stew meat, cut into 1½-inch chunks into the bottom of a big 5- to 7-quart slow cooker. Spread the pieces out so they are not all piled on top of each other. This helps the sauce reach every piece of meat.
  2. Mix everything together: Grab a medium bowl and mix together the 1 pieces can crushed tomatoes (28 oz), 0.5 cups dry red wine, 1 pieces large green bell pepper, cut into thin strips, 1 pieces large red bell pepper, cut into thin strips, 4 pieces garlic cloves, minced, 2 teaspoons dried Italian seasoning, 1 teaspoons kosher salt, plus more if needed, 0.5 teaspoons black pepper, and the 1 tablespoons olive oil (optional, makes sauce richer) and 0.3 teaspoons crushed red pepper flakes (optional, adds a little heat) if you are using them. Stir it all really well until it looks like one smooth, colorful mixture.
  3. Pour sauce over beef: Now pour that tomato and pepper mixture right over the raw beef in the slow cooker. Try to cover all the meat with the sauce. If any pieces of beef are sticking out, use a spoon to gently push them down into the sauce.
