Ingredients:
- Brown sugar
- Apricot halves
- 2 cups S/R flour
- Third cup oil
- Half up sugar
- 1cup milk
- 2 eggs
- Juice and rind of one lemon
Method:
Line the slow cooker with baking paper. Spray with nonstick spray then sprinkle with Brown sugar. Cover brown sugar with apricot halves.
In a bowl lightly mix all these ingredients except first 2 and place on top of apricots. Swirl a few teaspoons of apricot jam through mixture and sprinkle with coconut if desired. I was being fancy.
