Silverside Slow Cooker Recipe

Silverside Slow Cooker Recipe. This is becoming a weekly dinner.

Ingredients:

A piece of corned beef
About a cup of apple cider vinegar
One onion cut into quarters
2 carrots chopped roughly
About 12 peppercorns
3 bay leaves




Directions:

Everything in the slow cooker topped up with water until meat is covered, cook on high for 4 hours then on low until tender and almost falling apart. Served with homemade white sauce & mashed potato.

Tip:

(Take silverside out of the slow cooker about 10 minutes before serving it makes it easier to slice and I always use a serrated knife.)

Question:          HI, so when you say on low until tender, roughly how long would you say that would be?

Answer:             Usually around 3to 4 hours depending on size of meat.

Question:           So no other liquid just apple cider vinger.

Answer:             Sorry no only a cup of vinegar the rest is water.

Question:           How much water?

Answer:              just one cup of vinegar and top up with water until meat is covered.

When mum serves this dish we always have tomato sauce on top of the silver side. I guess everyone is different.

Suggestion – try mustard sauce using cooking juices. That was a family fav for us.

I am a mustard nut I’ll try this one. So it’s just some mustard and the cooking water mixed together or are there other ingredients.?

Mine is a recipe I learnt at school about 60 years ago. Recipe is approx as it is just in my head now.2 tablespoons brown sugar, about 1 tablespoons flour, 1tsp dry mustard – adjust that as you like, pepper. Mix these together well. Add 1 lightly beaten egg. I usually add a1/4 cup of vinegar but that recipe seems to use a lot of vinegar in the cooking process so you may not need it. Add cooking juices to that mixture and cook gently till it makes a nice sauce. Hope this is clear enough. Mine has probably evolved a bit as yours may but that’s a guide.

Exactly the same is cooking in my slow cooker right now (but with a tablespoon of brown sugar as well)

 That’s funny I am in north Qld as well and it’s so hot today so didn’t want to cook anything in stove/oven.
