Ingredients

1 pound (450 g) breakfast sausage, uncooked in bulk, or out of casing.

2 cups (approximately 8 oz / 225 g) baking mix (e.g. Bisquick or any other all-purpose baking mix)

2 cups (8 oz / 225 g) grated sharp cheddar cheese.

Cover the bottom of your slow cooker with a sheet of parchment paper or lightly spray it with a nonstick cooking oil to ensure it does not stick to it and will be easy to clean.

Add the uncooked breakfast sausage, baking mix and shredded cheddar cheese in a large mixing bowl. Wash hands or using a strong spoon, blend thoroughly until all the ingredients are blended. The mixture will be thick and also sticky, continue mixing until no dry pockets of baking mix are left.

Take a full spoon of the mixture at a time, and roll it between your palms to come out in little balls, of about 1 to 1 1/4 inches diameter. Put the sausage balls that have been shaped in a single layer inside the slow cooker, making them snug and not squished. When you have a smaller slow cooker you can form a second layer with the balls arranged so that there is a little spacing between them so that the steam can move around.

Cook the sausage balls in the slow cooker with the lid on top and cook them at either HIGH (2–2 1/2 hours) or LOW (4–5 hours) until they are cooked through. They are supposed to be hard to touch, slightly browned on the outside, and have a temperature of 160degF (71degC) inside when examined by using an instant-read thermometer.

After cooking, put the slow cooker on the WARM setting and serve. Keep the lid partially open, 5 to 10 minutes, should excess moisture be present; so that a little of the steam will escape, and the outside of the sausage balls remain pleasurably textured instead of being too soft.

Sausage balls may be served right out of the slow cooker using small tongs or toothpicks. When you are carrying them, cover them and keep them warm, they will heat up quickly on the WARM or LOW setting for a few minutes or you can use a low oven (around 250degF / 120degC) until they get hot.
