This easy slow cooker beef roast with rosemary and Dijon tastes yummy and looks super pretty. It uses just four things and cooks by itself while you do other stuff. I showed my husband how to make it on the phone so he could make his mom happy with a big roast. He did great the first time! The meat gets soft and juicy in tasty gravy.

Serve it on a warm white plate. Spoon some brown gravy on top. Add green rosemary sticks around it for pretty color. Eat it with mashed potatoes, noodles, or rice that soaks up the gravy. Add carrots, beans, or salad on the side. For fancy, try bread and red juice drink. For home night, use cold tea or fizzy water with lemon.

Ingredients

  • 3 to 4 lb beef chuck roast, cut off extra fat

  • 1/2 cup Dijon mustard

  • 2 tbsp fresh rosemary, chopped small (plus extra whole sticks for pretty, if you want)

  • 1 cup low-salt beef broth

Rosemary Dijon Beef Roast: Directions

  1. Dry the beef with paper towels. Put it in a big 6-quart slow cooker.

  2. Mix mustard and chopped rosemary in a bowl until smooth.

  3. Rub the mix thick on top and sides of the beef with a spoon or hands.

  4. Pour broth around the beef sides. Don’t wash off the top coat.

  5. Put on lid. Cook on low 8-10 hours or high 4-5 hours until super soft and pulls apart easy.

  6. Move beef to a board or plate. Pull into big soft pieces with two forks. Keep the brown top crust.

  7. Scoop fat off the gravy in cooker. Spoon some on meat. Put rest in a jug for table.

  8. Add rosemary sticks on plate for green color. Serve hot with extra gravy.
