Potato Hamburger Soup is a very tasty and hearty meal that is just right when you want to eat in a warm way.
Ingredients

1 pound ground beef

1 large onion, chopped

2 cloves garlic, minced

4 potatoes- peeling and dicing.

3 large carrots, sliced

2 celery stalks, sliced

4 cups chicken or beef broth
-
1 teaspoon dried thyme
-
1 teaspoon dried parsley
-
1 teaspoon paprika
-
Salt and pepper to taste

1 cup heavy cream
-
2 cups finely grated cheddar cheese.

1 cup milk
-
2 tbl cornstarch with 2 tbl of water (this is optional, used to thicken)

Parsley leaf, chopped (To garnish)

Sliced additional cheddar cheese to serve (garnish)
Potato Hamburger Soup: Instructions

Brown the Ground Beef – In a big frying pan, fry the ground beef in medium-high heat until it is not pink anymore. Drain any excess fat. Next add the chopped onion and minced garlic, saute onion until it turns transparent, and then add garlic, 5 minutes.

Prepare the Crockpot – Pour the browned beef mixture into a crockpot. Add potatoes, carrots and celery.

Put the broth of chicken or beef. Add thyme, parsley, paprika, salt and pepper. Stir to combine.

Cook on Low – Cover the crockpot and cook on low between 6-8 hours or high between 3-4 hours until the potatoes and vegetables are tender.

Add Cream and Cheese – Add in the heavy cream, shredded cheddar cheese and milk. In case you would like to have a thicker soup, you may add the cornstarch mix and mix thoroughly. Cook further on low heat not more than 15-20 minutes, until the cheese melts and the soup becomes creamy.

Serve – Pour the hot soup into bowls and topped with fresh chopped parsley and additional shredded cheddar cheese, should the need arise. Crusty bread will be a good accompaniment.
