Poor Man’s Pepper Steak Slow Cooker 4-Ingredient

Poor Man’s Pepper Steak

Poor Man’s Pepper Steak. My dad grew up eating this simple, cheap meal that fills you up. The meat gets super soft, and the peppers mix right into the tasty sauce.

This easy slow cooker meal uses just 4 things to make a yummy pepper steak. It’s like what many Midwest families ate growing up. A little beef goes far with lots of peppers in a thick, shiny brown gravy. It pours great over rice or potatoes. The slow cooking makes cheap steak soft like butter, and peppers turn mushy and blend into the sauce. It’s quick to start and feels like it cooked all day on the stove.

How to serve it: Spoon over hot white rice, brown rice, or buttery egg noodles to soak up the gravy. Mashed potatoes work too for a cozy feel. Add steamed green beans, broccoli, or carrots on the side for color. For super cheap old-style, serve with buttered bread or a warm roll to dip in extra sauce.

Poor Man’s Pepper Steak. Craving tender beef and sweet peppers in rich gravy? This budget-friendly slow cooker wonder transforms cheap steak into melt-in-your-mouth magic with bell peppers, mushroom soup, and onion mix. Hands-off cooking yields glossy sauce perfect for rice—cozy, hearty comfort in every bite!

Ingredients

  • 1 1/2 pounds cheap beef steak (like round or chuck), sliced into thin 1/2-inch strips

  • 2 big bell peppers (one green, one red), seeds out and cut into skinny strips

  • 2 cans (10.5 ounces each) cream of mushroom soup

  • 1 packet (1 ounce) dry onion soup mix

Poor Man’s Pepper Steak: Directions

  1. Spread the pepper strips flat on the bottom of a 4- to 6-quart slow cooker. They make a soft bed for the meat and blend into the sauce.

  2. Put the beef strips on top of the peppers. Spread them out so they cook even and get nice and tender.

  3. In a bowl, mix the mushroom soup and onion soup mix until smooth. It stays thick for that yummy gravy.

  4. Pour the mix over the meat and peppers. Scrape the bowl clean with a spoon. Skip extra water—the food makes its own juicy gravy.

  5. Put on the lid. Cook on LOW 7-8 hours, or HIGH 3 1/2-4 hours, until beef is super soft and peppers melt into the sauce.

  6. Stir gently to mix beef, peppers, and gravy. Taste and add a tiny bit of salt or pepper if you want (soup mix is salty already).

  7. Serve hot over rice, potatoes, or noodles with lots of gravy and peppers on top.
