Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 0.8 cups creamy peanut butter
  • 0.5 cups chicken broth (or water + ½ tsp salt)
  • 0.3 cups soy sauce
  • 3 tablespoons brown sugar, packed

Poor Man’s Peanut Butter Chicken: Steps

  1. Lay chicken in slow cooker: Put the raw 2 pounds boneless, skinless chicken breasts flat on the bottom of a 4- to 6-quart slow cooker. If the pieces are really thick, cut them in half the long way so they cook all the way through nicely.
  2. Spread peanut butter on chicken: Use a spoon or small spatula to spread 0.8 cups creamy peanut butter right on top of the raw chicken. Try to cover as much of the top as you can. It will look thick and a little messy — that is totally fine! It melts down as it cooks.
  3. Mix the sauce: In a small bowl, stir together 0.5 cups chicken broth (or water + ½ tsp salt), 0.3 cups soy sauce, and 3 tablespoons brown sugar, packed. Keep stirring until the sugar mostly goes away into the liquid.
  4. Pour sauce into slow cooker: Slowly pour the sauce around and over the chicken. Try not to wash all the peanut butter off the tops. It is okay if some of it slides down into the liquid — it will all mix together later.
  5. Cook until tender: Put the lid on and cook on LOW for 4 to 240 minutes, or cook on HIGH heat for 2 to 3 hours. The chicken is ready when it is very soft and you can pull it apart easily with a fork.
  6. Shred the chicken: When the chicken is done, use two forks to pull it apart or break it into chunks right inside the slow cooker. Stir it gently so the melted peanut butter and juices mix together into a smooth, creamy sauce all over the meat.
  7. Taste and fix the sauce: Take a little taste of the sauce. Want it saltier? Add a bit more soy sauce. Want it sweeter? Add a little more brown sugar. If the sauce feels too thick, stir in a small splash of water or broth until it looks just right.
  8. Serve and enjoy: Dish up the peanut butter chicken hot over rice, noodles, or potatoes. Make sure to spoon lots of that yummy sauce over every plate!

Notes

Tips & Easy Swaps: Want a little spice? Stir 1 to 2 teaspoons of chili-garlic sauce or a small pinch of red pepper flakes into the sauce before cooking. Like it a little tangy? Squeeze in some lime juice or add a splash of cider vinegar at the end. No brown sugar? Honey works great too! For an extra creamy and mild sauce, stir in a spoonful of coconut milk or sour cream right before serving — just make sure the slow cooker is turned off first so it does not curdle.
